Eggplant Burgers

Ingredients
2 tablespoons olive oil
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
1 large eggplant (cut crosswise into 1/4-inch thick slices, about 12-16 slices)
2 tomatoes, thinly sliced
8-16 leaves fresh basil
4 whole wheat pre-sliced sandwich thins
Method
Whisk together olive oil, red wine vinegar, Dijon mustard and black pepper in a small bowl
Brush eggplant slices with the oil mixture and cook under broiler or sauté in a frypan until tender (4-5 minutes per side)
Layer cooked eggplant slice, tomato slice, cooked eggplant slice, basil & black pepper, eggplant slice. Repeat to make 4 stacks.
Toast whole wheat sandwich thins. Add the vegetable stacks and serve immediately.
