Eggplant Burgers

Ingredients

  • 2 tablespoons olive oil

  • 2 teaspoons red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1/4 teaspoon black pepper

  • 1 large eggplant (cut crosswise into 1/4-inch thick slices, about 12-16 slices)

  • 2 tomatoes, thinly sliced

  • 8-16 leaves fresh basil

  • 4 whole wheat pre-sliced sandwich thins

Method

  1. Whisk together olive oil, red wine vinegar, Dijon mustard and black pepper in a small bowl

  2. Brush eggplant slices with the oil mixture and cook under broiler or sauté in a frypan until tender (4-5 minutes per side)

  3. Layer cooked eggplant slice, tomato slice, cooked eggplant slice, basil & black pepper, eggplant slice. Repeat to make 4 stacks.

  4. Toast whole wheat sandwich thins. Add the vegetable stacks and serve immediately.
